Ingredients

 Yule Log Base

Vanilla sponge cake slab  – approx. 60cm. 40cm
Golden North Ice Cream Simply Indulge in your two favourite flavours
Golden North Giant Twins in your favourite flavour

Cling wrap
Foil wrap

Pourable Chocolate Ganache

1 cup semi-sweet chocolate chips
½ cup heavy whipping cream
2 tablespoons light corn syrup

Instructions:

 Step 1: Prepare the Base

  • Lay a sheet of cling wrap on flat surface
  • Place the sponge cake slab on top of the cling wrap

Step 2: Layer the Ice Cream

  • Remove Golden North Simply Indulge Ice Cream from its tub in one piece and cut into thin slices.
  • Layer the ice cream slices evenly over the sponge cake.
  • Add up to two Golden North Giant Twins on top of the layered ice cream.

Step 3: Roll and Freeze

  • Tightly wrap the sponge and ice cream layers in the cling wrap, ensuring there are no air gaps.
  • Wrap the log again in foil, twisting the ends to seal it securely.
  • Place the wrapped log in the freezer for at least 24 hours.

Step 4: Make Pourable Chocolate Ganache

  • Tightly wrap the sponge and ice cream layers in the cling wrap, ensuring there are no air gaps.
  • Wrap the log again in foil, twisting the ends to seal it securely.
  • Place the wrapped log in the freezer for at least 24 hours.

Step 4: Shape the Log

  • After freezing, unwrap the log and cut it into your desired shape. For a traditional Yule Log look, cut two smaller pieces to create branches.

Step 5: Coat with Ganache

  • Pour the chocolate ganache over the log, letting it coat the surface and drip down the sides.
  • Refrigerate for at least 1 hour to set the ganache.

Step 6: Add the Final Touches

  • Decorate your Yule Log! You can get creative with edible additions like meringue mushrooms or use decorative ornaments (non-edible). For a realistic log effect, use a fork to etch bark-like lines into the ganache.

Serving Tips

  • Keep the Yule Log in the freezer until you’re ready to serve.
